Traditionally the sausage contained brains, though this is usually no longer the case. Despite this, it is still sometimes referred to as Hirnwurst ("brain sausage") in certain parts of Germany. Gelbwurst is coloured in a yellowish white and usually has a yellow skin round the edge.

has gloss	deu: Gelbwurst oder Hirnwurst ist eine bayerische Brühwurst aus feinem, magerem und nur mild gewürztem Brät aus Schweinefleisch, fettem Speck und auch Rind- oder Kalbfleisch, das nicht gepökelt (umgerötet) wurde. Sie hat daher eine blass-weißliche bis leicht gräuliche Farbe. Ihren Namen hat sie von dem mit Safran gefärbten Schweinedünndarm, in den das Brät ursprünglich gefüllt wurde. Heute wird häufig gelber Kunstdarm verwendet.
